Jeff’s Homemade Strawberry Shortcake Recipe

Hi everyone! We hope you are having a GREAT Summer. We decided we had to share Jeff’s easy Homemade Strawberry Shortcake recipe with all you. It’s a staple we’ve been making for years around here and it is always a crowd pleaser – and it seems like it would be way more effort than it actually is!

Yes – this recipe has you making your own biscuits.. no pillsbury dough for this dessert! But we promise it doesn’t take too much effort and it actually only takes about 30 minutes to prep and make. Another tip? Make your biscuits earlier in the day or the night before to save time.

Our biscuit recipe below has instructions for a food processor – which we think is the easiest way to make them. If you don’t have one, no worries, just use a pastry cutter while mixing the butter into the batter to make the crumbs. It might take a bit more elbow grease, but don’t be afraid! Either method works.

If you’d like to dress the biscuits with something sweet, you can always sprinkle a bit of ‘sugar in the raw’ or coarse sugar on top of the dough before placing them in the oven. Always delicious but not 100% necessary!

Strawberries. They are SO sweet when in season! Don’t you just love them? For our recipe, you can cut the strawberries any which way you like. It’s really just preference. We like to cut ours into large slices, some prefer dicing them into smaller sizes. Don’t stress. You can always mix the sugar and strawberries together in advance and cover. Doing this in advance can give the strawberries an extra sweet flavor which helps counterbalance the buttery biscuits.

Homemade whipped cream is extremely simple and easy to make. Nothing fancy, just 3 ingredients but it is MUCH easier to whip it in a KitchenAid mixer vs a hand mixer. You may feel a bit more tired using the hand mixer for 3-5 minutes but hey, no worries.

Ingredients
Homemade Biscuits
  • 1 1/2 Cups All Purpose Flour
  • 2 Tbsp Granulated Sugar
  • 1 Tbsp Baking Powder
  • 1/2 Tsp Kosher Salt
  • 6 Tbsp Unsalted Butter Cold & Cubed
  • 1/2 Cup Cold Buttermilk
Strawberries
  • 3 1/2 Cups Halved Strawberries
  • 2 Tbsp Granulated Sugar
  • 1 Tbsp Brown Sugar Topping
Whipped Cream
  • 1 Tbsp Granulated Sugar
  • 1/2 Cup Heavy Cream
  • 1/2 Tsp Vanilla Extract
Instructions
Homemade Biscuits
  1. Preheat the oven to 420 Degrees. 

  2. Mix the all-purpose flour, baking powder, salt, and sugar together in a food processor. Pulse until combined. 

  3. Add the cubed butter into the processor and pulse until crumbs form. Then pour the crumbs into a mixing bowl. 

  4. Pour the buttermilk over the crumb mixture and mix slightly until combined. Sprinkle a bit of flour on a separate work surface. Move the dough to the work surface and mold dough until it is 1/2 inch thick. Cut into 3-4 inch circles by using a cookie cutter or cup. Re-roll and continue to cut into the 1/2 inch thick 3-inch circles until you have 6 biscuits. 

  5. Arrange the biscuits to a parchment paper lined baking sheet. Bake for 15-20 minutes until tops are golden brown. Remove from oven and allow them to cool for 10 minutes. 

Strawberries
  1. Stir the strawberries and the granulated sugar together in a bowl. 

Whipped Cream
  1. Beat the heavy cream, vanilla and sugar together for about 3 minutes on high speed. 

  2. Cut the biscuits in half and layer with the strawberries and whipped cream. Add a sprinkle of brown sugar on top. Serve.
