Lemon Chicken Piccata is one of the favorite dishes we like to order when we go out to eat. For years I had thought it must be tricky to make at home until I finally tried it about 10 years ago. To my surprise it’s really easy to make and the flavor is such a welcome change from some of the go to meals that I make on a regular basis.

The one ingredient in this recipe that is essential but you may not have in your pantry is capers. Capers don’t come up too often in the recipes that I whip up so it’s an ingredient I have to make sure to get. After posting pictures of my Lemon Chicken Piccata on instagram recently, I received a ton of comments about how capers can be used in a surprising number of meals and it has inspired me to research more caper recipes. More on that to come in the future! But for now…

Ingredients
  • 3 large Skinless Boneless Chicken Breast – cut into 1/2″ thick cutlets
  • 1 cup All-Purpose Flour
  • Salt and Pepper to taste
  • 2+ tbsp Olive Oil
  • 2 large Lemons – 1/2 sliced thin and 1 1/2 juiced
  • 1 clove Garlic – Chopped fine
  • 1 1/2 cups Chicken Broth
  • 2 1/2 tbsp Capers – Drained and Rinsed
  • 4 tbsp Butter divided – 2 tbsp for sauce, 2 tbsp for pasta
  • 1 lbs Linguine Noodles
Instructions
  1. Pre-heat oven to 225 degrees and begin heating water for pasta in order to start boiling Linguine about the same time you start the Piccata sauce.

     

  2. Butterfly chicken breasts, flatten to about 1/2″ thickness and slice into cutlets.  There is no perfect way to do this, I try to make them somewhat even in size and thickness but each piece will be unique and that’s ok!

     

  3. Salt and pepper the chicken on each side and allow to sit for 5 mins on the cutting board. While the chicken is resting, heat a large saute pan to medium heat and add the olive oil. 

     

    Dredge the chicken in flour then pan fry for about 3-4 minutes on each side.  When fully cooked, place chicken on a dish and place in warm oven on until ready to serve.

     

  4. Slice 1/2 lemon into then slices removing any seeds.  Juice the remaining 1 1/2 lemons, you should have 1/4 – 1/3 cup of juice.

     

  5. Leave the bits from the chicken in the pan and add the chopped garlic to the over medium heat stirring occasionally for about 1 min until fragrant. Add chicken broth and bring to a slow boil, then add lemon slices.  Allow to slow boil on medium to medium-low for about 5 mins stirring occasionally. The sauce will reduce and slightly thicken.

     

  6. Add the pasta to the boiling water as Linguine will take about 10 mins and we want the pasta to be done just after the sauce. If using a different pasta, follow the directions adding to the water in order to time the pasta being al dente just after you complete the sauce.

     

  7. After the sauce has cooked down add lemon juice and capers and allow to cook another 5 minutes stirring occasionally. Add 3 tbsp of butter and stir until fully melted and mixed in. Remove from heat and set aside.

     

  8. Remove pasta pot from heat, drain pasta, return to the pot and add 2 tbsp of butter. Mix throughly.

     

  9. To serve, add pasta to each plate with 2 cutlets then cover with sauce and a slice or two of lemon (for garnish).

      Yes, 225 degrees. It’s just to keep the chicken warm while you’re making the sauce. The chicken has already been cooked at this point in the pan. :)
