Jeff’s Shrimp Pomodoro Recipe

Jeff's Shrimp Pomodoro Recipe - One of the easiest and most delicious weeknight dinner ideas and recipes. Takes less than 30 minutes to eat.

This is one of our favorite family dishes and we often say we could survive by eating it every day! Fresh tomatoes, basil and garlic make this a perfect last minute dish because it only takes about 30 minutes to prepare this shrimp pomodoro recipe.

Kristy and I love shrimp, but we also like to mix this dish up by substituting chicken or fresh veggies for the shrimp. Feel free to use whatever it is that you’re in the mode for and what you have available in your kitchen. Adjust the cooking time to prepare your protein or veggies they way you like and have fun! This is a meal everyone will love.

I hope you enjoy this Shrimp Pomodoro Recipe as much as we do!

Shrimp Pomodoro Recipe
Prep Time

Total Time
30 mins

Servings: 4 servings
Ingredients
  • 1 Lbs Shrimp – Deveined and Peeled (Tails off too!)
  • 2+ Tbs Olive Oil – Divided
  • 3 Cloves Garlic – Finely Chopped
  • 4-5 Large Tomatoes Chopped – If using smaller tomatoes such as Roma, increase to 6-7
  • 2 Tbs Fresh Basil Chopped
  • 3/4 Lbs Angel Hair Pasta – use more pasta if you want large servings
  • 1/2+ Cup Fresh Grated Parmesan Cheese (add cheese to taste)
  • Salt and Pepper to Taste
Instructions
  1. In a large pot, add water and bring to a boil while you are chopping the tomatoes.  Don’t add the angel hair pasta yet, it cooks quickly (usually 3-4 minutes) so you will want to add it to the boiling water after you start cooking the tomatoes below.

We want to have the pasta complete cooking just as the tomatoes and shrimp are done.

Note, if you are using a pasta that requires a longer cooking time such as spaghetti or fettuccine, you might need to start cooking before you go to the next step. Check the cooking time on the box and adjust accordingly.

  2. In large saute pan over medium heat add the olive oil and cook shrimp until it has turned pink, about 1 – 2 minutes per side.  Remove shrimp from pan and set aside.

If using frozen shrimp, be sure to defrost first per the package instructions.

  3. Drain any liquid from the saute pan, reduce heat to medium-low and add 1 tbs of olive oil.  When oil is hot, add chopped garlic and cook until fragrant, 2 – 3 minutes. Stir occasionally to ensure it doesn’t burn.

  4. Add chopped tomatoes, then salt and pepper to taste.  Cook for 6-8 minutes until the tomatoes get soft.

Note, I like to chop the tomatoes into bite size pieces, about 12 – 16 per tomatoes.

  5. Add angel hair pasta to the boiling water and cook per box instructions (typically 3-4 minutes).

  6. While the pasta is cooking, put the shrimp back into the saute pan, add the fresh chopped basil and a small amount of olive oil to taste (1-2 tsp is what I use). Stirring well to combine and bring out the flavor of the basil.

Take a taste at this point and add more salt if needed.

  7. Just before the pasta is done, pull out about 1/2 cup of the pasta water and set aside, you may want it in the next step.

  8. Drain pasta and add into the saute pan to combine with the tomatoes, shrimp and basil.  Stir for 1 minute until mixed well.

If you would like the sauce to be more moist, add some of the pasta water as needed.  How wet or dry is a personal preference, so make it the way you like it!

Serve topped with fresh grated parmesan cheese and enjoy!

So delish! I actually watched Jeff make this on your insta story, and I tried a version of it myself after that. It was delish, but I’m glad I’ve got this to follow now! So excited to try it with chicken next.

My husband and I had a miscommunication and he bought 56 ounces of Roma tomatoes. I used half of them to make this recipe, and my whole family loved it! It received rave reviews from everyone. Thanks for sharing, and I hope Jeff shares more 😊

Food for thought…This is the second time I’ve made the shrimp pomodoro. I prefer using cherry tomatoes instead of Roma’s or beefsteak(big tomatoes). It makes for a prettier dish and the seeds don’t separate as much. Love all of your cooking ideas.

    1. Hi Suzanne! Jeff loves using cherry tomatoes too when making this dish. It just depends on what we have in the house. Thanks so much for sharing! xo

This recipe is outstanding! My boyfriend and I make it at least once a week. We live in New Orleans so we have an abundance of fresh shrimp. I’ve also used crab meat and crawfish which are delicious in it.

We enjoy many of your recipes. Thanks for sharing them with us.

I scaled back for one serve and adapted to a low carbohydrate diet by serving over zoodles instead of pasta for a fantastic and filling dinner, thank you to LifeIsGood for the recommendation made for Best Of 21 tag game at FF&F.

I’ve made this probably about 8 times now and making tonight with my own grown tomatoes and basil! This recipe is a hit, Jeff!

  13. I LOVE this recipe, I always have shrimp in the freezer, so it’s an easy go-to recipe. Tonight I used canned petite tomatoes as a substitute for fresh tomatoes. Really, you can’t mess this recipe up, the canned tomatoes made a great sauce! My husband loves this recipe!
