


As you know Jeff loves to cook and we are focused on our health journey this year but honestly, sometimes life gets in the way and if it’s not convenient we end up falling off the wagon from time to time. Luckily we have the convenience of grocery shopping from our sofa which helps keep us on track. Tonight Jeff is making his easy one pan salmon recipe that’s not only quick and simple to whip together but saves me on dish duty. It’s a win win! The flavors of this salmon recipe are so tasty and fresh I’ve made sure include them below.



Easy to Make and Easy to Clean…
Jeff used one knife, one bowl, one cutting board, one spatula and one baking sheet to cook this entire meal. The Dish took so little time!
We loved our fresh seafood dinner and it was under $10 per person. We officially have no excuse not to eat healthy anymore!

- 4 4 Oz Salmon Pieces
- 1 lb Fresh Asparagus
- 1 lb Baby Red Potatoes
- 3 Tbsp Butter (divided – 2 tbsp for salmon, 1 tbsp for asparagus) Softened to room temp
- 3 Tbsp Veri Veri Teryaki Sauce
- 2 Tbsp Garlic Pureé (or 2 minced garlic cloves)
- 1 Tbsp Olive Oil
- 1 Tsp Ginger Pureé
- 2 Tsp Garlic Powder divided (1 for asparagus, 1 for potatoes)
- 1 Tsp Salt
- 1 Tsp Black Pepper
- 1/2 Lemon – Juice Only

Preheat oven to 425 degrees.

Cube baby red potatoes. Place in a medium sized bowl and add 1 tbsp olive oil and toss until well coated. Add 1 tsp of garlic powder, salt and pepper into the bowl. Toss to coat evenly. Place on parchment lined baking sheet and bake for 20 minutes.

While the potatoes are cooking, cut the salmon into 4 pieces.

In a bowl, add 2 tbsp butter, veri veri teriyaki, garlic pureé & ginger pureé. Mix until forms a paste. Take the paste and coat the tops of the 4 pieces of salmon. Set aside.

Melt 1 tbsp of butter in microwave. Add lemon juice and mix well. With a small brush, coat the asparagus spears well and sprinkle with 1 tsp garlic powder.

Once the potatoes are done cooking, remove the baking sheet from the oven and move the potatoes to one side of the pan. Place the Salmon on the opposite side, and add the asparagus to the center. Return to oven and bake for 10 to 15 minutes until salmon reaches 145 degrees.

Remove from oven and enjoy!
