Hi everyone!
Jeff made the best sweet and savory waffle recipe today that I thought I would share with all of you… This morning we walked to the Farmer’s Market where Jeff picked up a few fresh ingredients for a late breakfast. Once we got home he whipped this recipe up in just 20 minutes or so. So easy and soooo good! If you are craving a little protein you can add chicken to it as well… We went for the simple, fresh veggie style today.

Ingredients:
4 Belgian Waffles – Made with your favorite mix (including required ingredients)
1 Cup Shredded Cheddar Cheese
1 Medium Red Bell Pepper – Thinly Sliced
1 Medium Green Bell Pepper – Thinly Sliced
1/4 Small Red Onion – Thinly Sliced
1 Medium Jalapeño Pepper – Seeded and diced
1 clove Garlic – Minced
1 Tbs Butter
Small Ripe Tomatoes – 1 per serving
1 Cup Maple Syrup
Salt and Pepper
Preparation:
Sautée minced garlic, bell peppers and onion in butter. Salt and pepper to taste.
Mix Belgian waffle batter (click here for what I use) per box instructions, then stir in 1 cup of shredded cheddar cheese and a diced Jalapeño pepper. Cook the waffles per the instructions, no changes to cooking time is required.
Thinly slice the ripe tomatoes then salt and pepper to taste
Plate it up:
Place waffle on plate and top with a generous amount of the sautéed vegetables and garnish with tomato slices. Serve with warmed maple syrup. (Click here for the one I used today)
