Summer is all about healthy & delicious foods. Yes – it’s also about fun things like traveling, warm weather, family & friends, and more.. but I typically associate my favorite time of year with food! ;) Thankfully, Emma decided to add her Simple Acai Bowl Recipe to the blog so we can all make something icy cold and yummy this summer. (keeping things simple & small on the blog today you guys!)
Emma knows I’m trying really hard to keep my diet on the healthy side by using more fresh fruits and veggies.. And this cantaloupe bowl is perfect! You can follow her lead by using a larger fruit like cantaloupe or watermelons as the bowl to hold the Acai, or you can use a regular bowl. I personally think the Acai looks beautiful in the fruit bowl.
This Acai Bowl snack/dessert is so easy to make.. (I think it took Emma around 10 minutes to make both of our bowls!) To help speed up the process, Emma used a pre-frozen Acai Mix. You can find them almost everywhere nowadays. Emma likes Sambazon from Whole Foods – (Click here) but any brand will do! To top it off and add more color, simply add a few of your favorite toppings.. We used coconut flakes, strawberries, raspberries, blueberries, kiwi, pineapple, and more! If you make this make sure to let us know what spin you put it on to make it your own. The Recipe:
Delicious recipe for a summertime snack
- 1 Packet Frozen Acai Mix
- 1 Tbsp Bluberries
- 3 Chopped Strawberries
- 1/4 Cup Coconut Milk
- 1 Tbsp Coconut Flakes
- 1 Chopped Kiwi

Take the frozen packet of acai and heat it under warm water. Then empty it into blender.

Add the coconut milk (or liquid of your choice) into blender and lightly blend.

Put mixture into your bowl/fruit bowl of choice and stick into the freezer for 10 mins.

Take out of freezer and add fruit/coconut of choice.

My son told me his favorite açaí bowl at the shop near him has a little pineapple and ginger. I made it with a couple pieces of pineapple and some fresh ginger! It’s so good!
