Hi everyone! So, I’m calling this post Jeff’s Healthy Taco Salad Recipe but truly, this recipe is from my friend Rhonda. We used to eat this salad CONSTANTLY when we were all living in Austin, TX running around with babies (we met when our girls were in the same Gymboree group). I remember eating this salad constantly 24-ish years ago and it became a lunch and dinner staple in our household. It’s the perfect recipe to use for an easy dinner because of how little prep you need for it. Jeff would come home from work and I would have this salad ready for him!
This healthy taco salad makes for a quick lunch or dinner option because it’s SO simple to make.. it takes around 10 -15 minutes max. Also, you can prep this meal in advance on Sundays and eat it throughout the week (just don’t add the dressing til you’re ready to eat). Overall, 10/10 healthy recipe idea!
The trick to this recipe is to just add whatever veggies you have in the fridge at the moment. Even though we have a list on the recipe card below, you don’t have to go off of it. For example, we didn’t have tomatoes when I made it last week so I just skipped it. Don’t have kidney beans in your pantry? Substitute with chickpeas or black beans! There are so many options available. Some yummy additional ideas on veggies/peppers to add include cucumber, zucchini, jalapenos, serrano peppers and more.
- 1/2 White Onion Chopped
- 1 lb Lean Turkey or Beef
- 1 oz Olive Oil
- 1-2 Carrots Chopped
- 1 Bell Pepper Chopped
- 1 Can Kidney Beans Rinsed & Drained
- 4-5 Radishes Sliced Thinly
- 1 Tomato Chopped
- 1/4 Red Onion Chopped
- 2 Bags Americana Salad (or 1 Large Bag)
- Catalina Dressing (To Taste)
- Tortilla Chips (Optional)
- Tajin Seasoning (Optional)
- Avocado (Sliced, Optional)
- Mexican Cheese (Optional)
- packet Taco Seasoning

Chop all of your veggies that you want to add to your salad and put them to the side.

Add the white onion and lean ground turkey meat to a pan. Add olive oil and cook until browned then add the taco seasoning and water. Put the seasoned turkey and onion mix to the side

Use a large bowl to add the bags of lettuce. Add all of your chopped veggies to the bowl. Add Catalina dressing to your taste and mix.

Get out bowls and add your lettuce/veggie mix to each. Add a scoop of the turkey and onion mixture to each. Top each bowl with whatever toppings you choose (Tortilla Chips, avocado, mexican cheese, tajin, etc) and enjoy!
