Jeff's Greek Salad

Ingredients

  • 1 lb Cherry Tomatoes or your favorite
  • 2 Bell Peppers - Red and/or Orange
  • 1 Cucumber
  • 1/4 Red Onion
  • 1/4 White Onion
  • 4 oz Crumbled Feta Cheese
  • 3 oz Kalamata Olives - Pitted and Sliced
  • 1 tbsp Juice from Kalamata Olive Jar
  • 4 tbsp Red Wine Vinegar
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Dried Basil
  • 1 1/2 tsp Dried Oregano
  • Salt and Pepper to taste

Instructions

  1. Slice cherry tomatoes in half.

  2. Chop bell peppers into bite size pieces - I cut part of the bell peppers into chunks and some into thin slices, but this is optional.

  3. Using a peeler, peel the cucumber into stripes leaving about 1/3 of the skin on. Then chop half into chunks and the rest into thin slices.

  4. Cut the onions into thin slices.

  5. Place the vegetables into a large bowl, add the olives and the olive juice.

  6. In a small bowl, combine the red wine vinegar, olive oil, basil, oregano, salt and pepper. Then stir to combine.

  7. Pour the dressing over the vegetables and mix well.

  8. Place in the refrigerator for 30 mins or longer, stirring occasionally. This will allow time for the favors to meld together.

  9. Serve chilled with the Feta cheese on top.
