Hi everyone… Jeff here. Kristy is letting me take over her Blog this Friday so that I can share my ‘Grilled Chili Lime Chicken’ recipe with all of you. Many of you have asked if I’m really a Chef and the answer is no. While I love to cook and take pride in being creative in the kitchen, ‘Jeff the Chef’ (@jeff.thechef) actually comes from a nick name given to me while growing up.

I have 4 brothers and a sister and when you have that many siblings, you have to be creative in order to get attention with your parents, at least that’s how we talk about it today. The reality is that our parents shared the attention equally and did a great job raising a large number of very active kids. Somewhere along the way we picked up nick names that have stuck with us through all these years: Keith the Thief, Bob the Slob, Jeff the Chef, Doug the Slug, Brian’s Cryin’ and my sister (and the youngest) Marty Smarty.

The origin of the nick names is a constant debate among the 6 of us, but it’s all in good fun.  So…. while I have taken a few cooking classes, love to spend time in the kitchen and want to continue to try new recipes, I am not a Chef by trade.  Actually, I have worked in the technology field my entire career and cooking has become my passion outside of the office. Cooking is my way of winding down from the stress of the day and a time the Kristy and I can connect, share a few laughs and catch up on our days.

The first thing that comes to mind when I think about what to make for dinner is, ‘What can I grill?’ Living in California allows me to cook outside the majority of the year so I find myself in front of the grill several times a week with chicken on the menu most nights. I have found it’s all about the flavor ‘mixture’ between how the chicken is seasoned and the smokiness of the grill. One of my favorite ways to season chicken is to marinate it for 1 – 2 days so that the favor penetrates deep inside. The combination of chili and lime is a classic and one of my go to favorites.

My Grilled Chili Lime Chicken –

Ingredients:

4 boneless skinless chicken breasts
1/4 cup white vinegar
1/4 cup filtered water
Juice from 2 medium limes
1/4 – 1/2 onion diced
3 tbs chili powder
1 tbs garlic powder
1 tsp smoked paprika
1 tsp cayenne pepper (optional to kick up the heat)
1/2 tbs onion powder
Salt and pepper to taste
1 gallon size zip lock bag


Preparation:

Butterfly the chicken breasts so that each piece is consistent in thickness and throw in the zip lock bag

Add all remaining ingredients into the zip lock bag, remove most of the air, seal the bag and mix well

Let marinate in refrigerator 24 to 48 hours. Be sure to use or freeze before date on original store packaging

Grill over a medium heat until cook throughly

 

Look for more recipes soon that will include a few ideas for side dishes that we love… Most of the time it’s veggies on the grill, broiled or steamed. I’ll make sure to include any marinades or dressings that I like to coat them with. Tomorrow night I’m planning to write my Baked Cheese Tostada With Egg recipe. Kristy loved it the other night!

      Thank you! You can try baking it but.. it may dry out so maybe cooking it in a skillet with a small amount of olive oil would work best. Thanks for commenting!

  9. We made this last week ! We let the chicken marinate in the mixture for 2 days and we have never tasted better chicken ! So flavorful and moist! Thank you Jeff the Chef! We are big fans
