Best Party Potatoes


Best Party Potato Recipe from Father’s Day as promised!

Well, it’s midnight here in the San Francisco Bay area but it’s never too late (or early for that matter) for
‘Best Party Potatoes’!

We served the Potatoes with Jeff’s ‘Smoked Pulled Pork’ (Rub Recipe included) along with my Spinach Salad.

Yummy Day and all I can say is that I’m glad we ate AFTER swimming! ;)


Wicks Party Potatoes~

1 – Bag frozen Country shredded potatoes

1 – Stick of Butter melted

1 – 16oz container of sour cream

1 – Can condensed cream of chicken soup

1 – Red onion

2 – Cups of shredded cheese (we use Mexican flavored cheese but Cheddar and others work well too)

2 tables spoons minced garlic

? – real Bacon bits (as much as you want)

? – Salt, pepper and garlic powder to taste

Mix all ingredients together and bake @ 350 for 75 – 90 minutes


– You can let the potatoes thaw to make it easier to mix together and make a shorter cook time.

– Let the top cook to a crispy brown and cover if it needs to keep cooking. It’s hard to over cook.

– We use the throw away aluminum tins to make clean up easier – if you don’t make sure to use plenty of PAM! :)

**********Pulled Pork Rub Recipe**********

Brown Sugar 1/2 cup

Cane Sugar 1/2 cup

Some hot paprika (Hungarian) 2 TBS

Cayenne Pepper 1 TBS

Garlic Powder 1/2 Cup

Salt 3 TBS

Pepper 1 TBS

Chili Powder 1/3 Cup

COVER entire Pork Shoulder thickly. Cake it on! (should not be able to see any meat)

Smoke in Smoker @230* for 10 hours

  1. Sounds like you all had a really nice Father’s Day. Wow, those potatoes sound yummy! Melt in your mouth potatoes and my mouth is watering. What a delicious dinner you had. Does Cal go in the pool?

    1. We did Allison! Haha, thanks! Cal is NOT into the water. He wants to sleep 24/7 and since he can’t do that while swimming it’s OUT! LOL. ;) Hugs! xo

  2. Kristy, I hope this is the potato recipe you served at Jessicas’ wedding last year. They were so good. I promised to send you the recipe for “Potatoes Romanof”
    5 to 6 c. cubed cooked potatoes ( I usally bake russets the night before)
    1 pint cottage cheese
    1 c. sour cream (you can use a little more)
    1.4 c, chopped green onions
    garlic powder, salt and pepper to taste
    cover with grated cheddar, bake @ 375 til hot and bubbly

  3. In Canada we call a simpler version of these potatoes Funeral potatoes. Haha because they have been served at funerals for soooo long.
