Jeff’s Lazy Pizza

\For years our family has had a dinner ritual saved for those last minute, winging it nights. We always keep a frozen pizza and fresh veggies on hand… So why not combine the two to make a quick & healthy snack or dinner?  With Jeff’s magical spin on it, our family pizza is super flavorful and one of the most popular meals he now makes. Jeff’s Lazy Pizza is our go-to.

With so many of you asking if we would share the recipe after Jeff made it during an Instagram story one night we decided to add it to the blog. Even after years and years of eating this pizza, we never get sick of it! Perfect for anyone who has kids and wants to trick them into enjoying vegetables (I love how you have to “trick” kids sometimes!) or a working parent with limited time in the evenings to spend all night cooking away.

Make sure to take the seeds out of all peppers you chop! Otherwise you might have a spicy surprise.. unless you’re like Emma and Jeff and live for the classic mouth-burning flavor.

Jeff’s Lazy Pizza Recipe

Delicious and easy weeknight dinner that takes almost no effort!

Course: dinner
Cuisine: American

Ingredients
  • 1 Newman's Own Pepperoni Thin & Crispy Pizza
  • 1 1/2 Bell Pepper
  • 1/2 Poblano Pepper
  • 1 1/2 cups Broccoli Florets
  • 1/4 White Onion, Chopped
  • 1 clove Garlic, minced
  • 1 1/2 Tbs Balsamic Vinegar
  • Salt, Pepper & Olive Oil to taste
Instructions
  1. Preheat oven to 475 degrees

  2. Chop the vegetables – bell pepper, remove seeds and chop poblano pepper, dice broccoli florets, dice white onion.

  3. Combine chopped veggies, minced garlic and balsamic vinegar in bowl. Mix thoroughly adding the salt, pepper and a dash of olive oil.

  4. Drain any excess liquid from the vegetable mixture. Add the vegetables on top of the pizza.

  5. Place a baking pan on the bottom of the oven to catch any excess liquid.

  6. Place the pizza directly on the middle rack of your oven and set timer for 20 minutes. Check after 18 minutes.

  7. Remove from oven, slice into 6 pieces.

  1. Thanks for sharing what may seem like a “duh” recipe but isn’t! I have tried to add extras to frozen pizza without success over the years or ended up with soggy pizza- ugh! Will give this a try.
